The cookbook that’s helping me keep my New Year’s Resolution.

IMG_1438My New Year’s Resoloosh was to cook more and eat healthier. Yes, I know, painfully unoriginal but when your Domino’s app gets as much of a work out as mine, a resolution is the call to action one needs to make a change.

I knew I would require a bit o’ help to make sure this goal was achieved so I decided a healthy cookbook needed to be purchased and my main man Jamie O pulled through with the goods. His latest recipe read Everyday Super Food  is filled to the brim with healthy and relatively easy recipes that are packed with flavour and bound to impress.

This cookbook is bang on for workin’ girls and guys who don’t have a lot of time to be slaving over a hot stove. The recipes also won’t cost you an arm and a leg with the all too common elaborate page-long recipe lists. Perf!

Jamie has totally nailed this quick-cook, healthy-book. I’ve dished up about 6 or 7 recipes so far and every one has been an absolute knock-out! Executing 6 recipes from one cookbook has got to be some kind of Guinness World Record right? I mean it’s virtually unheard of!

So far my favourite creations have been the Tasty Fish Tacos with Game-Changing Kiwi, Lime & Chilli Salsa and the Baked Eggs with Popped Beans, Cherry Tomatoes and Ricotta on Toast.

Jamie wasn’t lying when he said the kiwi, lime and chilli salsa was a game changer. It was sweet and zangy with a little kick from the chilli. It was everything you could want from a salsa and quite possible a lover. Sweet with a bit of excitement and leaves you feeling oh so satisfied. Yes please!

This week I had a crack at the Happiness Pasta with Sweet Tomato, Aubergine and Ricotta because  literally nothing makes me happier than having the opportunity to eat pasta and not feel guilty about it.

Well the man who’s face you see more often than some of your loved ones has done it again. Jamie has got me back into the kitchen and for that, I owe him a well deserves slap on the ass. What a chap!

I’d love to know which healthy cookbooks you are loving this month?

Until next time… That’s what she said.
